Chaotianguo was originated from the early morning folk market of Weixian in Qianlong Period of Qing dynasty. Some people set up big pot in the market to warm food for the passers-by. Because the pot was cooked without using the lid, the pot has been called ``Chaotianguo`` (big boiling pot open to the air). Cooked in the pot usually pork, meat balls and dried bean curd etc, and served with pancakes, soup, as well as corianders and soy sauce etc, to guests who sit around the boiling pot, ordering shredded meat kinds rolled in pancakes and drinking as much as the hot soup cooked in the boiling pot. Now Chaotianguo has been developed to be a ``Chaotian Banquet``. To simmer the soup in a big pot of 50cm in diameter and 65cm in depth with chicken and donkey meat, to boil the pork meat, liver, lung, heart, stomach, intestines, with dozen of seasonings,and served also with the cold dishes at the table with the same height around the pot. There is a gap place at the round table where the service person can meet the requests of guests for doing the meat, pancakes rolls and soup. With the characteristics of fat but not greasy tastes, delicious meat and clear and nutritious soup, Chaotianguo has been appraised as ``Famous Local Snack Food of China`` and ``Famous Local Snack Food of Shandong Province`` respectively by China Cuisine Association and Shandong Provincial Trade Department.
