
Shouguang Tiger-head fried chicken, also known as Wanggao Tiger-head fried chicken, originating from Qing Dynasty, is a traditional delicacy in Shouguang for hundreds of years. Tiger-head fried chicken cooked by people in Wanggao Town is especially well known. After the chopped chicken is coated with paste and fried, the shape of which looks like a tiger’s head and therefore named tiger-head fried chicken. The features: when stewed with Yam or potato chunks and various spices, it becomes a tasty dish with crisp chicken bones, tender meat and fragrant soup; re-fried with pepper, the meat is spicy and tender with a crispy crust.
In Shouguang, whenever there are banquets for distinctive guests, festivals or wedding feasts, the dishes are served in an order of “first course is chicken, second course is fish, and the third course is cold dish”, the first course chicken referring to tiger-head fried chicken. As a symbol of the local food in Shouguang, this cuisine has been included in the Intangible Cultural Heritages List of Weifang.
