Jiyahele is a traditional famous delicacy of Weifang. It is said this food was originated from Shanxi and Shaanxi provinces, latter it was passed on after Beijing to Weifang. The name Hele was evolved from the word ``Helou``, which was popular colander thing made of wood or iron, for pressing the buckwheat dough to noodles. Later people in Weifang improved the techniques and took wheat noodles instead of buckwheat, cooked together with chicken and duck meat, ``Hanrou`` (grilled meat or sausage) and duck and chicken soup to make the ``Jiyahele``(Duck and Chicken Noodles). Now Jiyahele has become a popular local delicacy in Weifang with its fine makings, complete seasoning and delicious soup, and has been appraised as ``Famous Local Snack Food of China`` and ``Famous Local Snack Food of Shandong Province`` respectively by China Cuisine Association and Shandong Provincial Trade Department.
