
Jingzhi Stir-Fried Dish, also known as Jingzhi Stir-Fried Pork, is a beloved traditional local delicacy with a history spanning over a century. It is one of the three famous dishes of Jingzhi Town, alongside Jinsi Noodles (golden threaded noodles) and Sanye Bing (Three-Layer pancakes). Since the Ming Dynasty, Jingzhi has been a prosperous town known for its wealth. Its unique geographical location and thriving commerce have fueled the success of the local food industry, with Jingzhi Stir-Fried Dish being a prime example. Originating in the late Qing Dynasty and early Republic of China, Jingzhi Stir-Fried Dish is a part of the Shandong Cuisine. The dish comes in various forms, including stir-fried pork with cilantro, stir-fried pork with chives, stir-fried pork with garlic shoots, and stir-fried pork with stem lettuce shavings. The most classic version is stir-fried shredded pork with cilantro, also known as stir-fried shredded pork with coriander. This dish requires precise knife skills, with the pork shredded as finely as vermicelli. The pork and cilantro are used in a 3:7 ratio, and the dish is cooked with ingredients such as wood ear mushrooms, sesame oil, fennel, and dried shrimp. Jingzhi Stir-Fried Dish is characterized by its tender and delicate pork, fragrant cilantro, fresh appearance, and delicious taste. In 2020, it was listed in the sixth batch of representative projects of Weifang's municipal intangible cultural heritage.
